Ingredients for curd rice recipe

  • ½ cup Cooked rice
  • 1 cup - Thick curd
  • 4 tbsp - Milk
  • 1 tbsp - Finely chopped coriander leaves
  • 1 Finely chopped green chilli
  • 1 tsp Finely chopped ginger
  • 2 tbsp Pomegranate seeds
  • 1 tsp Salt

For tempering

  • 1 tsp Mustard seeds
  • ½ tsp Urad dal
  • A pinch Asafoetida/hing
  • 1 sprig Curry leaves
  • 1 tbsp Oil

Instructions
 

Method to prepare curd rice recipe

  • Wash and drain ½ cup of water and soak it for 10 minutes.
  • Pressure cook ½ cup of rice in 1 ½ cups water for 4 to 5 whistles on medium flame.
  • Once the pressure cools down, mix the rice well and mash the rice with the ladle.
  • Let the rice cool well.
  • Add 4 tbsp of boiled and cooled milk.
  • Now add 1 cup thick curd, and 1 tsp salt and combine well.
  • Mix this thoroughly. It should be thin but not overly gooey. If necessary, add 1/4 cup additional curd.
  • Add 1 tablespoon of finely chopped coriander leaves, 1 finely chopped green chilli, and 1 tsp finely chopped ginger and mix well.
