Ingredients in curd rice

Rice: You may make curd rice using either raw or boiled rice. You can use any short-grain rice like sona masoori, ponni rice etc. In addition, leftover cooked rice can be utilised to make curd rice, which is then served as a breakfast item or for lunch the following day.

Curd – fresh homemade or storebought curd should be used for the curd rice recipe. Milk – For curd rice, use standard, boiling milk, preferably full cream. 

Garnishing – For special occasions, you might garnish the dish with pomegranate seeds, cashews etc. you can add grated carrots to curd rice to make it healthier when cooking on a regular basis. Make careful to add garnishing only during the serving time or soon before serving.

Ingredients for curd rice recipe

  • Cooked rice – ½ cup
  • Thick curd – 1 cup
  • Milk – 4 tbsp
  • Finely chopped coriander leaves – 1 tbsp
  • Finely chopped green chilli – 1
  • Finely chopped ginger – 1 tsp
  • Pomegranate seeds – 2 tbsp
  • Salt – 1 tsp

For tempering

  • Mustard seeds – 1 tsp
  • Urad dal – ½ tsp
  • Asafoetida/hing – a pinch
  • Curry leaves – 1 sprig
  • Oil – 1 tbsp

Method to prepare curd rice recipe

  1. Wash and drain ½ cup of water and soak it for 10 minutes.
  2. Pressure cook ½ cup of rice in 1 ½ cups water for 4 to 5 whistles on medium flame.
  3. Once the pressure cools down, mix the rice well and mash the rice with the ladle.
  4. Let the rice cool well.
  5. Add 4 tbsp of boiled and cooled milk.
  6. Now add 1 cup thick curd, and 1 tsp salt and combine well.
  7. Mix this thoroughly. It should be thin but not overly gooey. If necessary, add 1/4 cup additional curd.
  8. Add 1 tablespoon of finely chopped coriander leaves, 1 finely chopped green chilli, and 1 tsp finely chopped ginger and mix well.

For tempering

  1. Heat 1 tbsp oil in a tem[ering pan, as it heats add 1 tsp mustard seeds when the mustard seeds begin to crackle, add ½ tsp urad dal, a pinch of asafoetida/hing, 1 sprig curry leaves and fry well.
  2. Mix well after adding the tempering to the curd rice.
  3. Garnish with 2 tbsp pomegranate seeds and mix well.
  4. Enjoy the delicious and wholesome curd rice. 

Tips and tricks for the preparation of curd rice recipe

  • Use only freshly cooked and cooled rice. Refrain from utilising old or leftover rice.
  • Before incorporating the curd into the cooked, well-mashed grains, make sure they are soft.
  • When the curd is added to the rice without being thoroughly mashed, the rice becomes firm.
  • Avoid mixing cold yoghurt with hot rice because the curd may congeal. 
  • To prevent the curd rice from tasting sour, use more milk and less curd if you are packing for a trip or want to eat it after 2-3 hours.
  • You can mash the rice any way you like; if you like it gooier, mash it more.
  • When preparing tadka, be sure to fry the dals until they are golden brown since only then will they be crunchier when eaten with curd rice.
  • Pomegranate, grated carrot and black grapes are suitable for curd rice.
  • The tempering can also be prepared using ghee to give a beautiful aroma to the dish.
