Old English words like cury and currey have been connected to curry by historians. That raises the question of whether curry is truly Indian. For those who are unfamiliar, curry is just a mixture of spices that has the viscosity of gravy. Jalfrezi is one such smoky curry with roots that go back 200 years. Jalfrezi’s historical roots can be traced to the time of British administration in India.  We are now extremely familiar with the unique tastes and flavours of the Indian palate.

In the 1850s, Calcutta served as the capital of the British Raj, and Lord Marcus Sandys, the governor of Bengal at the time, is credited with creating this meal. Several Anglo-Indian recipes make mention of jalfrezi, indicating how well-liked it is in Britain. The jalfrezi, mostly an Indian cooking method, gradually made its way from English middle-class kitchens to the elite, crossing boundaries and socioeconomic divisions. Today, everything from veggies to chicken and paneer may be combined with this strong flavour.
